  2. In a separate bowl, mix dry ingredients (flour, baking soda).
  3. In another bowl, whisk together wet ingredients (milk, egg, vanilla extract, oil/butter).
  4. Combine wet and dry ingredients until you have a thick batter—don’t overmix.

Cook the Pancakes in a Pan

  1. Heat your choice of fat (olive oil, coconut oil, or melted butter) in a hot pan or on a pancake griddle over medium heat.
  2. Pour batter for mini pancakes or larger sizes for the whole family.
  3. Flip when small bubbles form on top, about 2–3 minutes per side.
