Simple Sweet Potato Hearts for Babies and Kids

These sweet potato hearts are perfect for babies on Valentine's day or any day! They're packed with vitamin A, fiber, and carbohydrates- all needed for rapidly growing babies. They have just 2 main ingredients and you can add spices and herbs as you'd like.
Ingredients
- 1 sweet potato
- Olive oil
- (optional) Spices and herbs (cinnamon, cumin, paprika, garlic, or onion powder)
Instructions
1. Preheat the oven to 375°F.
2. Slice the sweet potato into 1/4-inch rounds and toss pieces in olive oil.
3. Bake for 15-20 minutes, or until soft, on a parchment lined baking sheet.
4. Take potato rounds out of oven and sprinkle spices and herbs as you'd like. I like cinnamon, cumin, or garlic powder on sweet potatoes for babies (optional).
5. Use cookie cutters to create heart shapes (or any shape you'd like!). Toddlers love helping with this step!
Notes
- Serve the "leftovers" from the heart cut outs as well. Most babies will not mind! Otherwise I eat the leftovers as is or use in another sweet potato recipe.
- You can try cutting the sweet potatoes into hearts before baking but I've found it's much easier to do after they have softened, especially if you have plastic heart cutters.
- Feel free to use any cookie cutters! Toddlers love helping with this step too.
