Easy Veggie Fritters for Babies and Kids
My baby devours these veggie fritters every time! Serve whole or cut in half if your baby has the palmar grasp or cut into bite-sized pieces if your baby has the pincer grasp. I like to serve with a side of avocado or fruit!
Veggie Fritters for Babies
Fritters full of colorful veggies and a savory flavor!
Ingredients
- 1/2 Bell pepper (any color)
- 1/4 cup Chopped green onion
- 1/4 cup Grated carrot
- 1/4 cup Shredded parmesan cheese
- 1 tablespoon Parsley (dry or finely chopped fresh)
- 2 Eggs
- 1/2 cup Flour
- 1/4 teaspoon Garlic powder
- 1/4 teaspoon Onion powder
- 1 tablespoon olive oil (for frying)
Instructions
- Dice the bell pepper.
- Finely chop the green onion.
- Grate the carrot.
- Add the bell pepper, green onion, and carrot to a medium mixing bowl.
- Add parmesan and parsley to the vegetables and mix until combined.
- Add the eggs to the mixing bowl and stir until combined.
- Add the flour and garlic and onion powder to the mixture and stir until evenly combined.
- In a large frying pan, heat 1/2 tablespoon of oil on medium low heat. Drop a 1/4 cup of the mixture into the pan. Flatten slightly with a fork or spatula. Fry for 2-3 minutes on each side. Add more oil as needed.
Notes
Consistency:Â You may want to start with a 1/4 cup flour and add more if you'd like your batter thicker.Â
