- 5 pitted dates
- 1/4 hot water
- 2 tablespoons cocoa powder
Instructions
- Boil 1/4 cup water.
- Pour hot water over pitted dates and let them soften for 5-10 minutes.
- Open tofu and let excess liquid drain from tofu
- Add tofu, cocoa powder, softened dates they were soaking in into a blender.
- Blend mixture until smooth.
- Serve immediately or store in an air-tight container in the fridge up to 3 days.
Notes
I used firm tofu because that's all that was available but silken tofu is recommended for tofu mousse. You will get a smoother texture with silken tofu.
Feel free to add more or less cocoa powder and more or less dates to your taste preference.
Add other spices like cinnamon and nutmeg if you prefer.
Easily add nutritious toppings like chia seeds, hemp seeds, and fruit.
To add sweetness to older kids' or adults' mousse, honey and maple syrup work well.
